Audacity has a reasonable help file, but a much more useful way of learning tips and tricks with on screen demonstrations is at guidesandtutorials.com I’ve found this very helpful.
It’s clear, informative, and not over complicated. It also explains about the LAME mp3 encoder and how to add it.
